- Preheat your oven to 160ºC (320ºF) for a fan oven or 170ºC (338ºF) for a conventional one. Gather all your ingredients and equipment.
- Combine the chopped dark chocolate and butter in a heatproof bowl. Melt them over simmering water, stirring until smooth, about 5 minutes. Stir in the vanilla extract.
- In a separate bowl, whisk eggs with caster sugar and demerara sugar for about 5 minutes until pale and fluffy.
- Sift together flour, cocoa powder, baking powder, and salt in another bowl. Fold in chocolate chips.
- Gently fold the melted chocolate mixture into the whisked egg mixture, then add dry ingredients until just combined.
- Prepare a lined baking tray. Drop heaping tablespoons of batter onto the tray, leaving space between each scoop for expansion.
- Bake for 12-14 minutes until the tops are set and crackly, with soft centers. Cool on the tray for a few minutes before transferring to a wire rack to cool completely.
