Ingredients

For the Browkie Batter
  • 1 cup plain (all-purpose) flour Substitute with gluten-free flour for a gluten-free version.
  • 1/2 cup cocoa powder Dark cocoa can be used for a richer taste.
  • 1 teaspoon baking powder Ensure it’s fresh for optimal results.
  • 200 grams dark chocolate (chopped) Use high-quality chocolate for the best flavor.
  • 100 grams butter Can substitute with coconut oil for a dairy-free option.
  • 2 large eggs Using room temperature eggs enhances fluffiness.
  • 150 grams caster sugar Granulated sugar can be an acceptable substitute.
  • 50 grams demerara sugar Brown sugar may also work well as a substitute.
  • 1 teaspoon vanilla extract Opt for pure vanilla for the richest taste.
  • 100 grams chocolate chips Feel free to mix in white chocolate, nuts, or dried fruits for exciting variations.
Optional Add-Ins
  • 1/2 cup nuts (walnuts, pecans) Provides a nice contrast to the chewy texture.
  • 1/2 cup dried fruit Consider cranberries or cherries to complement the chocolate.

Method

Step‑by‑Step Instructions
  1. Preheat your oven to 160ºC (320ºF) for a fan oven or 170ºC (338ºF) for a conventional one. Gather all your ingredients and equipment.
  2. Combine the chopped dark chocolate and butter in a heatproof bowl. Melt them over simmering water, stirring until smooth, about 5 minutes. Stir in the vanilla extract.
  3. In a separate bowl, whisk eggs with caster sugar and demerara sugar for about 5 minutes until pale and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt in another bowl. Fold in chocolate chips.
  5. Gently fold the melted chocolate mixture into the whisked egg mixture, then add dry ingredients until just combined.
  6. Prepare a lined baking tray. Drop heaping tablespoons of batter onto the tray, leaving space between each scoop for expansion.
  7. Bake for 12-14 minutes until the tops are set and crackly, with soft centers. Cool on the tray for a few minutes before transferring to a wire rack to cool completely.
