  4. Whisk together flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients.
  5. Chill the dough in plastic wrap for at least 30 minutes.
  6. Scoop out dough, roll into balls, and create indentations for filling.
  7. Fill each indentation with peach preserves.
  8. Roll filled cookies in granulated sugar before placing on baking sheet.
  9. Bake for 12-15 minutes until lightly golden underneath.
  10. Cool on the baking sheet for 5 minutes then transfer to a wire rack.
