Preparation
- In a large bowl, combine the grated onion, ground beef, breadcrumbs, salt, pepper, cream, and egg. Mix gently until just combined.
- Divide the meat mixture into four equal portions. Roll each portion into a ball and press down to form patties about ¾ inch thick.
- Heat a nonstick skillet over medium heat with olive oil and unsalted butter. Sear patties for 4-5 minutes on each side until golden brown.
- Transfer patties to a plate and keep warm. In the same skillet, add diced onion and minced garlic. Cook for 2 minutes until fragrant.
- Sprinkle salt, pepper, and flour over the cooked onions and garlic. Gradually pour in broth, scraping up browned bits. Simmer for 2 minutes.
- Stir in heavy cream and fresh dill, bringing the sauce to a gentle boil. Simmer for 1-2 minutes until thickened.
- Return the seared patties to the skillet and let them simmer in the creamy dill sauce for 5-6 minutes until heated through.

Notes
Handle the meat minimally to avoid tough patties. Always ensure the skillet is hot before searing.
