Method

Preparation
  1. In a large bowl, combine the grated onion, ground beef, breadcrumbs, salt, pepper, cream, and egg. Mix gently until just combined.
  2. Divide the meat mixture into four equal portions. Roll each portion into a ball and press down to form patties about ¾ inch thick.
  3. Heat a nonstick skillet over medium heat with olive oil and unsalted butter. Sear patties for 4-5 minutes on each side until golden brown.
  4. Transfer patties to a plate and keep warm. In the same skillet, add diced onion and minced garlic. Cook for 2 minutes until fragrant.
  5. Sprinkle salt, pepper, and flour over the cooked onions and garlic. Gradually pour in broth, scraping up browned bits. Simmer for 2 minutes.
  6. Stir in heavy cream and fresh dill, bringing the sauce to a gentle boil. Simmer for 1-2 minutes until thickened.
  7. Return the seared patties to the skillet and let them simmer in the creamy dill sauce for 5-6 minutes until heated through.
