- In a mixing bowl, whisk together ¼ cup of soy sauce, 2 tablespoons of brown sugar, 2 minced garlic cloves, 1 teaspoon of freshly grated ginger, 1 tablespoon of sesame oil, and a pinch of black pepper.
- Add 1 pound of ground beef and 2 finely chopped green onions to the marinade. Mix gently to combine, then let it marinate in the refrigerator for at least 15 minutes.
- Remove the marinated beef from the fridge and divide it into four portions, shaping each into a patty with a slight indentation in the center.
- In a separate bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of gochujang, 1 tablespoon of lime juice, and 1 teaspoon of honey. Refrigerate the sauce.
- Cook the patties on a preheated skillet or grill for 4–5 minutes per side until browned and cooked through.
- Toast the burger buns in a separate skillet for about 1-2 minutes until golden brown.
- Spread the creamy gochujang mayo on the bottom half of each bun, then top with a beef patty, greens, and cucumber or pickled radish.
- Sprinkle sesame seeds on top of each assembled burger and serve immediately.
