For the Sumac Onions
  • 2 tbsp Sumac Key for adding tang.
  • 1 small Parsley Fresh herb, cilantro can be a substitute.
  • 1 tbsp Olive Oil Neutral oil can also be used.
  • 1 tbsp Lemon Juice Fresh lemons yield the best flavor.
  • 2 tbsp Water Adjust for your desired consistency.

Step-by-Step Instructions for Viral Doner Kebab
  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. In a bowl or food processor, combine ground beef, grated onion, minced garlic, paprika, oregano, salt, and pepper. Mix until sticky and well-blended.
  3. Take half of the meat mixture, shape it into a rectangle on parchment, roll tightly, and twist the ends to secure. Repeat with the remaining mixture.
  4. Place the wraps on the baking tray with whole tomatoes and long green peppers. Bake for 30 minutes until browned.
  5. Remove the parchment paper and slice the cooked kebab rolls into bite-sized pieces.
  6. Spread the pieces back on the tray and broil for 3-5 minutes until golden-brown and slightly crispy.
  7. Whisk together mayonnaise, sour cream, and lemon juice for the garlic sauce. Toss sliced onions with sumac oil and lemon juice.
