Ingredients

For the Skillet
  • 1 pound Ground Beef Feel free to use ground turkey for a leaner option.
  • 0.5 teaspoon Kosher Salt If needed, substitute with sea salt.
  • 0.25 teaspoon Black Pepper Can be swapped with white pepper for a different flavor.
  • 1 Green Bell Pepper Any color bell pepper works beautifully!
  • 2 Medium Zucchinis Yellow squash is a lovely alternative.
  • 1 cup Eden Black Soy Beans For a non-bean choice, diced mushrooms are a great substitute.
  • 2 tablespoons Tomato Paste Crushed tomatoes can suffice but adjust cooking time.

Equipment

  • Large skillet

Method

Step‑by‑Step Instructions
  1. Heat a splash of oil in a large skillet over medium-high heat. Add 1 pound of ground beef seasoned with ½ teaspoon of kosher salt and ¼ teaspoon of black pepper. Sauté the beef until evenly browned and fully cooked, about 6-8 minutes. Drain excess grease.
  2. Lower the heat to medium and add 1 chopped green bell pepper and 2 chopped medium zucchinis to the skillet. Stir and cook for an additional 10 minutes, stirring occasionally until zucchini becomes fork-tender.
  3. Stir in 1 cup of rinsed black soy beans and 2 tablespoons of tomato paste into the skillet. Mix thoroughly and allow to simmer for another 5 minutes over medium heat.
  4. Taste and adjust seasoning with additional salt and pepper if needed. Consider topping with shredded cheddar cheese, fresh cilantro, sour cream, or a dollop of salsa before serving.

Notes

Rinse beans well before adding to remove packing residue. Avoid cheese overload to keep the dish light. Customize with other veggies and adjust spice levels as desired.
