Dough Ingredients
  • 1 cup Warm Water Use lukewarm for better dough.
  • 1 tbsp Sugar Honey can be used instead.
  • 2 tsp Active Dry Yeast Check expiration date.
  • 3 cups All-Purpose Flour Whole wheat can be used.
  • 1 tsp Salt Use sea salt for cleaner taste.
  • 2 tbsp Olive Oil Melted butter can be substituted.
Topping Ingredients
  • 1 cup Ricotta Cheese Cottage cheese is a lower-fat substitute.
  • 1 cup Mozzarella Cheese Provolone can be tried.
  • ½ cup Parmesan Cheese Omit for lighter pizza.
  • 1 zest and juice Lemon Bottled lemon juice is acceptable.
  • 2 tbsp Fresh Thyme Fresh rosemary or basil can be used.
  • 1 tbsp Honey Maple syrup can be used as vegan alternative.
  • 1 tsp Red Pepper Flakes Optional for a spicy kick.

Method
 

Dough Preparation
  1. In a small bowl, mix warm water and sugar, then sprinkle yeast on top. Let it sit for 5 minutes.
  2. In a large bowl, combine flour and salt, then add yeast mixture and olive oil. Mix to form rough dough.
  3. Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise in a warm area for 1 to 1.5 hours.
Topping Preparation
  1. Mix ricotta, mozzarella, and parmesan cheese with lemon zest and juice in a medium bowl.
  2. Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside for 30 minutes.
  3. Roll out risen dough to a 12-inch round on a floured surface.
Assembling and Baking
  1. Transfer rolled dough to parchment paper, spread cheese mixture, and sprinkle fresh thyme on top.
  2. Slide pizza onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes.
  3. Remove from oven, drizzle with olive oil and honey, sprinkle red pepper flakes. Cool slightly before slicing.
