Dough Preparation
- In a small bowl, mix warm water and sugar, then sprinkle yeast on top. Let it sit for 5 minutes.
- In a large bowl, combine flour and salt, then add yeast mixture and olive oil. Mix to form rough dough.
- Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place dough in an oiled bowl, cover, and let rise in a warm area for 1 to 1.5 hours.
Topping Preparation
- Mix ricotta, mozzarella, and parmesan cheese with lemon zest and juice in a medium bowl.
- Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside for 30 minutes.
- Roll out risen dough to a 12-inch round on a floured surface.
Assembling and Baking
- Transfer rolled dough to parchment paper, spread cheese mixture, and sprinkle fresh thyme on top.
- Slide pizza onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes.
- Remove from oven, drizzle with olive oil and honey, sprinkle red pepper flakes. Cool slightly before slicing.
