Preparation
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, cook the ground beef with chili powder, cumin, oregano, salt, and pepper until browned.
- Wash and cut the bell peppers in half or quarters, and place them cut side up on a parchment-lined baking sheet.
- Fill each bell pepper piece with the beef mixture and sprinkle cheddar cheese on top.
- Bake in the preheated oven for 5-7 minutes until the cheese is melted and the peppers are tender.
- Remove from oven, and top with cherry tomatoes, jalapeños, and cilantro, finishing with a dollop of sour cream and guacamole.
