Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).

  3. Wash and cut the bell peppers in half or quarters, and place them cut side up on a parchment-lined baking sheet.
  4. Fill each bell pepper piece with the beef mixture and sprinkle cheddar cheese on top.
  5. Bake in the preheated oven for 5-7 minutes until the cheese is melted and the peppers are tender.
  6. Remove from oven, and top with cherry tomatoes, jalapeños, and cilantro, finishing with a dollop of sour cream and guacamole.
