  • 1 cup Ritz Crackers (crushed) can substitute with other buttery crackers or plain breadcrumbs

For the Macaroni and Cheese Layer

  • 1 can Condensed Cheddar Cheese Soup homemade cheese sauce is an option
  • 1 cup Shredded Mozzarella Cheese can mix with other cheeses like pepper jack for spiciness
  • 1 cup Shredded Cheddar Cheese
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder fresh minced garlic can be used
  • 1 teaspoon Onion Powder or fresh minced onion

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 175°C (350°F) and grease a 23x33 cm baking dish.
  2. In a large mixing bowl, combine the lean ground beef, crushed Ritz crackers, onion soup mix, and eggs. Mix thoroughly.
  3. Transfer the mixture to the greased baking dish and form a compact layer. Spread the ketchup-barbecue mixture on top.
  4. Bake in the preheated oven for 30 minutes.
  5. Cook the macaroni noodles in boiling salted water until al dente, about 7-8 minutes. Drain and cool.
  6. Whisk together whole milk and the condensed cheddar cheese soup. Fold in macaroni and shredded cheeses.
  7. After 30 minutes of baking, remove the meatloaf and spoon the cheese mixture over it. Sprinkle additional cheese on top and bake for another 17-20 minutes.
  8. Let the meatloaf rest for several minutes before slicing and serving warm.
