  • 2-3 tablespoons Lime Juice Freshly squeezed

  • 1 cup Mango Diced; substitute with peaches or pineapple if desired

  • 2 pieces Avocado Ripe for optimal texture

Method
 

Step-by-Step Instructions
  1. Chop fresh shrimp into bite-sized pieces and place in a medium mixing bowl.
  2. Finely chop half a red onion, one jalapeño, and a handful of fresh cilantro. Add to the bowl with shrimp.
  3. Squeeze the juice of 2-3 fresh limes over the shrimp mixture and season with salt and pepper. Cover and refrigerate for at least 30 minutes.
  4. Slice two ripe avocados in half, remove the pit, and scoop out some flesh to create a larger cavity.
  5. Gentle fold in one diced mango to the shrimp ceviche after marination.
  6. Spoon the ceviche mixture into each avocado half generously.
  7. Serve immediately, garnishing with additional cilantro or lime wedges if desired.
