Ingredients
  

For the Chicken
  • 1 lbs Chicken Thighs Succulent and juicy
  • 1 tsp Kosher Salt To enhance flavor
  • 1 tsp Black Pepper To season
For the Vegetables
  • 2 medium Zucchini Sliced into half-moons
  • 1 medium Red Onion Cut into wedges
  • 1 cup Cherry Tomatoes Halved
  • 1/2 cup Kalamata Olives Pitted
For the Marinade
  • 1/4 cup Extra Virgin Olive Oil Essential for flavor
  • 3 cloves Garlic Minced
  • 2 tbsp Lemon Juice Freshly squeezed
  • 1 tbsp Dried Oregano Classic Mediterranean herb
  • 1 tbsp Dried Basil Classic Mediterranean herb
  • 1 tsp Dried Thyme Classic Mediterranean herb
  • 1/2 tsp Red Pepper Flakes Optional for heat
For the Topping
  • 1/2 cup Feta Cheese Crumble on top
  • 1/4 cup Fresh Parsley Chopped, for garnish
  • 2 wedges Lemon For serving

Method
 

Cooking Steps
  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Whisk together olive oil, garlic, lemon juice, oregano, basil, thyme, salt, pepper, and red pepper flakes in a bowl.
  3. Pat chicken thighs dry, season, and marinate in half the marinade for at least 15 minutes.
  4. Prepare zucchini, onion, and tomatoes, placing them on the pan with the remaining marinade.
  5. Arrange marinated chicken on the pan and scatter vegetables around.
  6. Add tomatoes and olives, then roast for 25-30 minutes.
  7. Once done, sprinkle feta cheese and let it rest for a few minutes.
  8. Garnish with parsley, and serve warm with lemon wedges.
