- Whisk together olive oil, garlic, lemon juice, oregano, basil, thyme, salt, pepper, and red pepper flakes in a bowl.
- Pat chicken thighs dry, season, and marinate in half the marinade for at least 15 minutes.
- Prepare zucchini, onion, and tomatoes, placing them on the pan with the remaining marinade.
- Arrange marinated chicken on the pan and scatter vegetables around.
- Add tomatoes and olives, then roast for 25-30 minutes.
- Once done, sprinkle feta cheese and let it rest for a few minutes.
- Garnish with parsley, and serve warm with lemon wedges.
