Preparation Steps
- Fill a large pot with water, add salt, and bring to a rolling boil. Once boiling, add elbow macaroni or penne, cooking until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
- In a large skillet, melt butter over medium heat. Add sweet corn kernels, cooking for about 8-10 minutes until charred and golden brown.
- Remove skillet from heat, stir in chili powder and smoked paprika, coating the corn evenly. Allow to cool slightly.
- In a large mixing bowl, combine cooled pasta and charred corn with mayonnaise, lime juice, cotija cheese, cilantro, and jalapeño. Toss gently until well coated.
- Season with salt and black pepper to taste. Cover and refrigerate for at least 30 minutes to meld flavors.
