Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C). Gather all ingredients and equipment.
  2. In a mixing bowl, combine cream cheese and sugar. Blend until smooth and creamy, about 2-3 minutes.
  3. Add the vanilla extract and sour cream to the mixture and blend for 1-2 minutes until well combined.
  4. Introduce eggs one at a time, mixing gently after each addition.
  5. Combine graham crackers and melted butter in a bowl until the mixture resembles wet sand.
  6. Press the graham cracker mixture into the bottom of the lined mini cupcake pan.
  7. Pour cheesecake filling over the crusts, filling each liner about three-quarters full.
  8. Bake for approximately 20 minutes, until set around the edges but slightly jiggly in the center.
  9. Let cool in the pan for 10 minutes, then transfer to the refrigerator and chill for at least 2 hours.
  10. Top with festive sprinkles before serving and enjoy!
