  • 1 medium Onion
  • 4 cloves Garlic
  • 2 cups Tomatoes Fresh or canned
  • 4 cups Beef Broth Vegetable broth as substitute for lighter version
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Oregano
  • 1 teaspoon Cumin
  • 2 pieces Bay Leaves
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For Serving
  • 12 pieces Corn Tortillas Soak in broth fat before frying

Step-by-Step Instructions
  1. Soak the dried chilies in hot water for about 15 minutes.
  2. Blend the soaked chilies with onion, garlic, and tomatoes until smooth.
  3. Place the beef in the crock pot, pour over the blended sauce, and add the remaining sauce ingredients.
  4. Cook on low for 8 to 10 hours until fork-tender.
  5. Shred the beef and mix it back into the sauce.
  6. Heat oil in a skillet and fry dipped corn tortillas until crispy.
  7. Fill each crispy tortilla with the shredded beef mixture and fry again until golden.
  8. Serve hot with broth for dipping and garnish with cilantro and onions.
