Crust
  • 1.5 cups graham cracker crumbs can substitute with crushed digestive biscuits or gluten-free crackers
  • 0.25 cups light brown sugar or granulated sugar
  • a pinch kosher salt or regular salt
  • 0.5 cups unsalted butter or coconut oil for dairy-free
Filling
  • 8 ounces full fat cream cheese can use dairy-free alternative
  • 1 cups sweetened condensed milk can use coconut condensed milk for dairy-free
  • 1 teaspoon vanilla extract or vanilla bean paste for intensified flavor
  • 1 tablespoon lime juice or fresh lemon juice
  • 1.5 cups mango puree can be fresh or canned, well-drained
  • 1 tablespoon gelatin can use vegan alternative
  • 1 cups heavy whipping cream or non-dairy whipped topping
  • 2 tablespoons powdered sugar can blend regular sugar to powder

Method
 

Instructions
  1. Prepare the mango puree by peeling and chopping fresh mangoes or using canned ones. Blend until smooth, measuring out 1 ½ cups.
  2. Make the crust by mixing graham cracker crumbs, light brown sugar, kosher salt, and melted unsalted butter until moistened. Press into the springform pan and freeze for 15 minutes.
  3. Prepare the filling by beating softened cream cheese until smooth. Gradually add sweetened condensed milk, vanilla extract, and lime juice, mixing until creamy.
  4. Bloom gelatin by sprinkling it over cold water for 5 minutes, then gently heat until dissolved. Mix into the mango puree and fold into the cream cheese mixture.
  5. Whip heavy whipping cream with powdered sugar until stiff peaks form, then fold into the mango cream cheese mixture.
  6. Pour the filling onto the crust, reserving ¼ cup of mango puree for swirling on top. Refrigerate for at least 8 hours or overnight to set.
  7. Once set, remove from the springform pan, slice, and serve chilled, optionally garnished with mango slices or whipped cream.
