Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until it shimmers.
  2. Add 1 pound of diced chicken breast, stirring occasionally for 5-7 minutes until browned.
  3. Incorporate 1 cup each of chopped bell peppers and corn, sautéing for 3-4 minutes.
  4. Sprinkle in 1 teaspoon each of cumin and paprika, plus a pinch of salt and pepper; stir for 1 minute.
  5. Stir in 1 cup of rinsed rice, toasting for 1-2 minutes.
  6. Pour in 2 cups of chicken broth, bring to a boil, then reduce heat and simmer for 20-25 minutes.
  7. Check rice for tenderness; cover and cook longer if necessary.
  8. Remove from heat and fold in 1 cup of shredded cheddar cheese until melted.
  9. Allow to rest for 5 minutes before serving.
