  • 1 cup Shredded Mozzarella Cheese Can substitute with other melting cheese
  • 1 cup Cherry Tomatoes Halved
  • 1/4 cup Grated Parmesan Cheese Optional but recommended
  • a few Fresh Basil Leaves Optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season with salt and pepper. Heat olive oil in a skillet and cook chicken for 6-7 minutes per side until golden and cooked through. Let rest for 5 minutes, then slice.
  3. Arrange flatbreads on a baking sheet and spread basil pesto evenly on each.
  4. Top each flatbread with sliced chicken, shredded mozzarella, halved cherry tomatoes, and grated Parmesan cheese.
  5. Bake in the preheated oven for 10-12 minutes until cheese is melted and bubbly.
  6. Broil for an additional 1-2 minutes for extra crispiness, watching closely.
  7. Remove from oven, let cool for a few minutes, slice, and garnish with fresh basil leaves if desired. Serve warm.
