- Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
- In a mixing bowl, combine light brown sugar, soy sauce, rice vinegar, minced garlic, and optional ginger; whisk until smooth.
- Pat the salmon fillets dry; drizzle with olive oil and season with salt and black pepper.
- Place salmon fillets skin-side down in the baking dish; pour two-thirds of the glaze over them and surround with diced pineapple.
- Bake for 12–15 minutes until salmon flakes easily; the glaze should be caramelized.
- Switch to broil for 1–2 minutes, watching closely to caramelize the top.
- Let salmon rest for 5 minutes; garnish with parsley and serve.
