Ingredients
  

For the Salmon
  • 4 fillets Salmon preferably wild-caught
  • 2 tablespoons Olive Oil for greasing and drizzling
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
For the Glaze
  • 1 cup Fresh or Canned Pineapple diced, if using canned, drain well
  • 1/4 cup Light Brown Sugar or coconut sugar as substitute
  • 1/4 cup Soy Sauce use tamari for gluten-free
  • 2 tablespoons Rice Vinegar or apple cider vinegar if needed
  • 2 cloves Minced Garlic for flavor
  • 1 teaspoon Grated Fresh Ginger optional
For Garnish
  • 2 tablespoons Fresh Parsley chopped for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a mixing bowl, combine light brown sugar, soy sauce, rice vinegar, minced garlic, and optional ginger; whisk until smooth.
  3. Pat the salmon fillets dry; drizzle with olive oil and season with salt and black pepper.
  4. Place salmon fillets skin-side down in the baking dish; pour two-thirds of the glaze over them and surround with diced pineapple.
  5. Bake for 12–15 minutes until salmon flakes easily; the glaze should be caramelized.
  6. Switch to broil for 1–2 minutes, watching closely to caramelize the top.
  7. Let salmon rest for 5 minutes; garnish with parsley and serve.
