Step-by-Step Instructions
  1. Start by slicing the chicken breast or thighs into bite-sized pieces. Season with salt, black pepper, and Italian seasoning.
  2. Heat 2 tablespoons of olive oil or butter in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for about 6-7 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, add one minced garlic clove and sauté for about 30 seconds until fragrant.
  4. Pour in 1 cup of heavy cream and add 2 ounces of cream cheese along with 1/2 cup of chicken broth. Stir continuously over medium heat for about 3-4 minutes until well combined.
  5. As the sauce begins to thicken, add 1 cup of freshly grated Parmesan cheese, stirring until incorporated. Cook for another 2-3 minutes until creamy.
  6. Toss in your choice of optional vegetables and cook for about 2-3 minutes until they soften.
  7. Return the cooked chicken to the skillet and mix everything together thoroughly for another minute.
  8. Add the zucchini noodles to the skillet and cook for 2-3 minutes until just tender.
