Baking the Cake
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans, lining bottoms with parchment paper.
- In a medium bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder until well blended.
- In a large bowl, combine vegetable oil, buttermilk, eggs, white vinegar, vanilla extract, and food coloring. Whisk until smooth.
- Fold the dry ingredients into the wet ingredients using a spatula until just combined.
- Divide the batter evenly between the two pans and bake for 25-30 minutes. Check with a toothpick.
- Allow cakes to cool in pans for about 10 minutes, then invert onto a wire rack to cool completely.
Preparing the Frosting
- Melt white chocolate in a heatproof bowl and let it cool slightly.
- Beat the cream cheese and butter until fluffy. Gradually add confectioners’ sugar and melted white chocolate.
- Mix until smooth and creamy.
Assembling the Cake
- Place one layer of cake on a serving plate, spread frosting on top, then place the second layer.
- Frost the sides and top of the cake. Chill in refrigerator for at least 30 minutes.
