Ingredients
  

For the Chicken
  • 8 pieces Breaded Chicken Tenders substitute with grilled chicken or gluten-free tenders
For the Dressing
  • 1/4 cup Honey or maple syrup for vegan option
  • 1/4 cup Avocado Oil can be substituted with olive oil
  • 1/4 teaspoon Ground Ginger replace with freshly grated ginger if preferred
  • 1/4 teaspoon Garlic Powder or fresh minced garlic, used sparingly
  • 1/4 teaspoon Cayenne Powder adjust to taste or omit for milder version
  • 2 teaspoons Chili Powder substitute with paprika for less heat
  • 1/2 teaspoon Salt plus pepper to taste
For the Salad
  • 2 stalks Romaine Lettuce chopped
  • 1/2 Red Onion diced
  • 1 Avocado diced
  • 2 stalks Green Onions diced
  • 1 handful Cilantro ¼ cup chopped
  • 1/2 cup Shredded Carrots about 6 baby carrots
  • 1/4 Jalapeno finely chopped and deseeded
  • 1/2 Lime Juice from ½ a lime
For Topping
  • 1/3 cup Cilantro Lime Dressing or any creamy dressing based on preference

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or air fryer. Arrange chicken tenders on a baking sheet. Bake for 20-25 minutes until golden brown, flipping halfway through.
  2. While the chicken is baking, wash and chop the romaine lettuce, red onion, avocado, green onions, and optional vegetables. Place in a large mixing bowl.
  3. In a medium bowl, combine honey, avocado oil, ground ginger, garlic powder, cayenne, chili powder, and salt. Whisk until smooth. Dice cooked chicken and add to the sauce, tossing gently.
  4. Pour the coated chicken into the bowl of chopped vegetables. Drizzle with cilantro lime dressing and lime juice, mixing gently.
