  1. Begin by washing and slicing your fresh cucumber into thin rounds. Dice the ripe pineapple into bite-sized pieces and finely slice the red onion. Soak the red onion in cold water for 5 minutes if desired. Combine all the ingredients in a large mixing bowl.
