- Blend 1½ cups of fresh strawberries with honey and lemon juice until smooth to create the strawberry puree.
- Combine vanilla Greek yogurt with honey and vanilla extract, then mix well. In another bowl, blend plain Greek yogurt with the strawberry puree and diced strawberries.
- Mix granola with melted coconut oil and any additional honey. Ensure it is evenly coated for a solid granola base.
- Press the granola mixture into the bottom of popsicle molds, then pour the vanilla yogurt mixture over it. Top with the strawberry yogurt mixture.
- Insert popsicle sticks into the molds and freeze for at least 4 hours or overnight for best results.
- To unmold, run warm water over the outside of the molds for a few seconds before gently pulling out the popsicles.
