Method
 

Step-by-Step Instructions
  1. Blend 1½ cups of fresh strawberries with honey and lemon juice until smooth to create the strawberry puree.
  2. Combine vanilla Greek yogurt with honey and vanilla extract, then mix well. In another bowl, blend plain Greek yogurt with the strawberry puree and diced strawberries.
  3. Mix granola with melted coconut oil and any additional honey. Ensure it is evenly coated for a solid granola base.
  4. Press the granola mixture into the bottom of popsicle molds, then pour the vanilla yogurt mixture over it. Top with the strawberry yogurt mixture.
  5. Insert popsicle sticks into the molds and freeze for at least 4 hours or overnight for best results.
  6. To unmold, run warm water over the outside of the molds for a few seconds before gently pulling out the popsicles.
