  1. Gather all your ingredients: wash and chop the shiitake mushrooms and scallions, and set aside.
  2. In a small bowl, lightly beat the egg using a fork until combined but not fully mixed.
  3. Place a non-stick skillet over low heat, add oil, and allow it to heat for about 1 minute.
  4. Carefully place the rice paper wrapper in the skillet, pressing down gently.
  5. Pour half of the beaten egg onto one side of the rice paper and cook for about 1 minute.
