Method
 

Step-by-Step Instructions
  1. Combine mozzarella cheese, roasted red peppers, basil, and red pepper flakes in a mixing bowl. Mix thoroughly and set aside.
  2. Lay chicken breasts flat and season both sides with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Pound to an even thickness.
  3. Slice a pocket in each chicken breast and fill with the cheese and pepper mixture. Secure with toothpicks or kitchen twine.
  4. Heat a skillet over medium-high heat. Add olive oil and sear the stuffed chicken for about 4-5 minutes per side until golden brown.
  5. Preheat oven to 375°F (190°C) and transfer seared chicken to a baking dish. Pour chicken broth and drizzle balsamic vinegar over the top and bake for 20-25 minutes.
  6. Remove from oven and let rest for 5 minutes before slicing. Serve warm with sides.
