- Combine mozzarella cheese, roasted red peppers, basil, and red pepper flakes in a mixing bowl. Mix thoroughly and set aside.
- Lay chicken breasts flat and season both sides with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Pound to an even thickness.
- Slice a pocket in each chicken breast and fill with the cheese and pepper mixture. Secure with toothpicks or kitchen twine.
- Heat a skillet over medium-high heat. Add olive oil and sear the stuffed chicken for about 4-5 minutes per side until golden brown.
- Preheat oven to 375°F (190°C) and transfer seared chicken to a baking dish. Pour chicken broth and drizzle balsamic vinegar over the top and bake for 20-25 minutes.
- Remove from oven and let rest for 5 minutes before slicing. Serve warm with sides.
