- Season the chicken thighs generously with salt and pepper, and let sit for 5–10 minutes.
- Brown the chicken in a skillet with olive oil over medium-high heat for 5–7 minutes skin-side down.
- Flip the chicken and cook for another 3–4 minutes before removing from skillet.
- Caramelize sliced onions in the same skillet for about 5 minutes until softened.
- Add minced garlic and stir for 30 seconds.
- Stir in apple slices and thyme; sauté for 2–3 minutes.
- Pour in apple cider and chicken broth, scraping the bottom of the pan.
