Preparation Steps
- Preheat your oven to 400°F (200°C).
- Lightly grease your baking dish with 1 tablespoon of olive oil.
- Layer the cherry tomatoes, bell pepper, and zucchini at the bottom of the prepared baking dish.
- In a bowl, combine remaining olive oil, minced garlic, dried oregano, paprika, salt, and pepper. Toss the vegetables in this mixture.
- Place the fish on top of the seasoned vegetables.
- Arrange the lemon slices over the fish fillets.
- Drizzle any leftover olive oil over the top of the dish.
- Cover the dish with aluminum foil and bake for 20-25 minutes.
- For a crispier topping, remove the foil for the last 5-10 minutes and switch to broil.
- Garnish with chopped fresh parsley and serve warm.
