  • 4 fillets White Fish (cod, halibut, or sea bass) Use the freshest catch for optimal flavor
For the Vegetables
  • 2 tablespoons Olive Oil Essential for roasting
  • 2 cloves Garlic Minced
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Bell Pepper Thinly sliced
  • 1 medium Zucchini Thinly sliced
  • 1 medium Lemon Sliced
For Seasoning
  • 1 teaspoon Dried Oregano Classic Mediterranean herb
  • 1 teaspoon Paprika Adds smokiness
  • Salt & Pepper To taste
For Garnish
  • Fresh Parsley Chopped, optional but recommended

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease your baking dish with 1 tablespoon of olive oil.
  3. Layer the cherry tomatoes, bell pepper, and zucchini at the bottom of the prepared baking dish.
  4. In a bowl, combine remaining olive oil, minced garlic, dried oregano, paprika, salt, and pepper. Toss the vegetables in this mixture.
  5. Place the fish on top of the seasoned vegetables.
  6. Arrange the lemon slices over the fish fillets.
  7. Drizzle any leftover olive oil over the top of the dish.
  8. Cover the dish with aluminum foil and bake for 20-25 minutes.
  9. For a crispier topping, remove the foil for the last 5-10 minutes and switch to broil.
  10. Garnish with chopped fresh parsley and serve warm.
