Ingredients
  

For the Pasta
  • 225 grams Pasta can be substituted with gluten-free pasta if desired
For the Tofu Mixture
  • 1 pack Firm or Extra Firm Tofu around 350g or 12 ounces
  • 2 tablespoons Olive Oil can be replaced by avocado oil
  • 2 cloves Garlic minced; or 1 teaspoon garlic powder
  • 1 large Bell Pepper cored and chopped; substitute with seasonal vegetables
  • 1 teaspoon Smoked Paprika regular paprika or Italian herbs can also be used
  • 0.5 teaspoon Chili Powder omit for milder taste
For the Greens and Sauce
  • 2 cups Spinach any leafy green can be used
  • 3 cups Tomato Sauce homemade or store-bought
  • 0.25 cup Parsley chopped; substitute with basil or cilantro
  • Salt and Pepper to taste

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions (about 8-10 minutes). Drain and reserve a bit of pasta water.
  2. Drain tofu and press gently with a kitchen towel to remove excess moisture. Crumble tofu into small pieces and set aside.
  3. In a deep pan, heat olive oil over medium-high heat. Add minced garlic and sauté until fragrant (1-2 minutes).
  4. Add chopped bell pepper to the pan. Sauté until tender (about 5 minutes).
  5. Stir in crumbled tofu, smoked paprika, chili powder, salt, and pepper. Cook for another 5 minutes.
  6. Fold in spinach and tomato sauce. Simmer for about 5 minutes until heated through.
  7. Add cooked pasta to the sauce. Toss together, adding reserved pasta water if necessary.
  8. Serve hot, garnished with parsley or basil and a sprinkle of cheese if desired.

Notes

Press the tofu well to achieve a firmer texture. Feel free to swap in seasonal vegetables for variety.
