Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice the top off a medium head of garlic, drizzle with two tablespoons of olive oil, wrap in foil, and roast for 30-35 minutes until soft and fragrant.
  2. While the garlic is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add chopped fresh spinach and sauté for about 2-3 minutes until wilted, seasoning with salt and pepper.
  3. Once the garlic is cool, squeeze the cloves into a bowl and mash them. Add ricotta cheese, half of the mozzarella, oregano, and a pinch of salt and pepper. Mix until smooth.
  4. Spread the garlic-ricotta mixture over the pre-made pizza crust. Layer the sautéed spinach, remaining mozzarella, and crumbled feta on top.
