Step-by-Step Instructions
- Preheat your oven to 400°F (200°C). Slice the top off a medium head of garlic, drizzle with two tablespoons of olive oil, wrap in foil, and roast for 30-35 minutes until soft and fragrant.
- While the garlic is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add chopped fresh spinach and sauté for about 2-3 minutes until wilted, seasoning with salt and pepper.
- Once the garlic is cool, squeeze the cloves into a bowl and mash them. Add ricotta cheese, half of the mozzarella, oregano, and a pinch of salt and pepper. Mix until smooth.
- Spread the garlic-ricotta mixture over the pre-made pizza crust. Layer the sautéed spinach, remaining mozzarella, and crumbled feta on top.
- Bake in the preheated oven for 15-20 minutes until the crust is golden brown and the cheese is melted and bubbly.
- Let it cool for a few minutes, garnish with fresh basil, slice, and serve warm.

Notes
Ensure garlic is soft and golden after roasting for the best flavor. Customize toppings and watch pizza closely to avoid burning.
