Ingredients
  

For the Noodles
  • 200 g Udon Noodles Look for vacuum-packed for best results.
For the Stir-Fry
  • 1 tbsp Neutral Oil Alternatively use vegetable or canola oil.
  • 100 g Shrimp Fresh or frozen.
  • 2 cloves Garlic Minced.
  • 1 medium Yellow Onion Sliced thinly.
  • 100 g White Mushrooms Sliced.
  • 1 medium Carrot Cut into matchstick pieces.
  • 2 stalks Spring Onion Use both green and white parts.
For the Sauce
  • 3 tbsp Soy Sauce
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black Pepper Adjust to taste.
  • 2 tbsp Oyster Sauce
  • 1 tbsp Dark Soy Sauce Avoid substituting with regular soy sauce.
  • 1 tbsp Rice Vinegar
  • 1 tbsp Brown Sugar
  • 1 tsp Freshly Crushed Black Pepper Adjust as desired.
  • 1 tsp Toasted Sesame Oil Add at the end.

Method
 

Step-by-Step Instructions
  1. Boil water and cook udon noodles according to package instructions (3-5 minutes). Drain and rinse under cold water, then drizzle with neutral oil.
  2. Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Sauté minced garlic for 1 minute, then add sliced mushrooms and cook for 2-3 minutes. Add thinly sliced onions and carrots, seasoning with salt and pepper, then remove from pan and set aside.
  3. In the same skillet, add 2 tablespoons of neutral oil, increase heat to high, and cook shrimp for 2-3 minutes until pink and opaque. Add a splash of soy sauce and a pinch of salt, tossing to coat. Remove from pan.
  4. Add cooked udon noodles to the skillet and stir-fry for 2-3 minutes until slightly crispy on edges.
  5. Pour in the sauce ingredients, stir to coat noodles, then add sautéed vegetables and chopped spring onions. Mix together until well combined.
  6. Transfer to a serving plate. Garnish with additional spring onions or sesame oil. Serve hot.
