Step-by-Step Instructions
- Boil water and cook udon noodles according to package instructions (3-5 minutes). Drain and rinse under cold water, then drizzle with neutral oil.
- Heat 1 tablespoon of neutral oil in a large skillet over medium-high heat. Sauté minced garlic for 1 minute, then add sliced mushrooms and cook for 2-3 minutes. Add thinly sliced onions and carrots, seasoning with salt and pepper, then remove from pan and set aside.
- In the same skillet, add 2 tablespoons of neutral oil, increase heat to high, and cook shrimp for 2-3 minutes until pink and opaque. Add a splash of soy sauce and a pinch of salt, tossing to coat. Remove from pan.
- Add cooked udon noodles to the skillet and stir-fry for 2-3 minutes until slightly crispy on edges.
- Pour in the sauce ingredients, stir to coat noodles, then add sautéed vegetables and chopped spring onions. Mix together until well combined.
- Transfer to a serving plate. Garnish with additional spring onions or sesame oil. Serve hot.
