Ingredients
  

For the Marinade
  • 3-4 lbs Organic Chicken skin-removed, thighs and drumsticks preferred
  • 1-2 tbsp Browning Sauce optional, adds color and depth
  • 2-3 tbsp Jamaican Green Seasoning substitute with all-purpose seasoning if necessary
  • 2 tbsp Jamaican Curry Powder burn it before use for best flavor
  • 2 tsp All-Purpose Blend store-bought or homemade
  • 1 tsp Sea Salt
  • ½ tsp Smoked Paprika adds smokiness
For Cooking
  • 4 tbsp Olive Oil for browning chicken and sautéing spices
  • 2 tbsp Brown Sugar omit if using browning sauce
For the Sauce
  • 14 oz Full-Fat Coconut Milk provides creaminess
  • 1 cup Organic Chicken Stock low-sodium preferred
  • 1 tbsp Jamaican Pepper Sauce or your preferred hot sauce
For the Vegetables
  • 2 medium Russet Potatoes peeled and cubed
  • 2 medium Carrots peeled and chopped
  • 1 medium Bell Pepper chopped
  • 3 cloves Garlic minced
  • 2 tsp Fresh Ginger minced
  • 1-3 Scotch Bonnet Peppers whole or chopped based on spice tolerance
  • 2 Green Onions lightly crushed or chopped
  • 2 sprigs Fresh Thyme
For Seasoning
  • 1 tsp Ground Allspice for traditional Jamaican flavor
  • Salt and Black Pepper to taste

Method
 

Marinate Chicken
  1. In a large mixing bowl, combine the cleaned organic chicken with browning sauce, Jamaican green seasoning, sea salt, all-purpose blend, smoked paprika, and Jamaican curry powder. Cover and refrigerate for at least 3 hours or overnight.
Brown Chicken
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add brown sugar until caramelized, then add marinated chicken and sear for 3-4 minutes per side.
Burn Curry Powder
  1. In the same skillet, add another tablespoon of olive oil and the Jamaican curry powder. Cook for 2-3 minutes until fragrant.
Sauté Vegetables
  1. Add minced garlic, fresh ginger, scotch bonnet peppers, chopped green onions, carrots, and bell pepper to the skillet. Sauté for 5-7 minutes until softened.
Prepare Sauce
  1. Stir in ground allspice, salt, and black pepper to taste. Pour in coconut milk and chicken stock, add Jamaican pepper sauce, and bring to a gentle boil.
Combine Ingredients
  1. Add the browned chicken and cubed potatoes to the skillet. Stir to coat with sauce, reduce heat to low, and simmer for 20-25 minutes.
Serve
  1. Once cooked through, serve your Authentic Jamaican Curry Chicken garnished with chopped scallions.
