  • 12 oz Corn Tortillas Can swap for zucchini or cauliflower tortillas.
  • 2 cups Colby Jack Cheese Use dairy-free options if needed.
  • 2 Onion (diced) Sauté to bring out sweetness.
  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tbsp All-Purpose Flour To thicken sauce.
  • 1 cup Chicken Stock
  • 15 oz Tomato Sauce
  • 2 cloves Minced Garlic Use fresh for best results.
  • 4 oz Green Chiles
  • 15 oz Black Beans
For Serving
  • Sour Cream
  • Guacamole
  • Fresh Salad

Method
 

Cooking Instructions
  1. Preheat the oven to 350°F (175°C) and coat a 9x13 inch baking dish with cooking spray.
  2. Sauté the diced onion in a skillet over medium heat with a drizzle of oil for about 5 minutes.
  3. Stir in chili powder and cumin, then add flour to form a base for the enchilada sauce.
  4. Whisk in chicken stock and tomato sauce; simmer for about 5 minutes until thickened.
  5. Cook the ground beef in a separate skillet until browned. Season with salt and pepper and add another diced onion.
  6. Mix in green chiles and black beans, then stir in ½ cup of the prepared enchilada sauce.
  7. Layer the casserole starting with ½ cup enchilada sauce, followed by 6 tortillas dipped in sauce.
  8. Spread half of the beef mixture over the tortillas and add 1 cup of cheese, repeat with another layer.
  9. Top with remaining cheese and bake uncovered for about 20 minutes until bubbly and golden.
