Method

Cooking Steps
  1. Prepare the Marinade: In a large bowl, combine hoisin sauce, soy sauce, oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, minced garlic, grated ginger, and red food coloring. Whisk until smooth.
  2. Marinate the Chicken: Add chicken thighs to the marinade, ensuring they are coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a wire rack over a foil-lined baking tray.
  4. Arrange Chicken for Baking: Remove chicken from marinade, allowing excess to drip off, and place on the wire rack.
  5. Bake the Chicken: Bake for 25-30 minutes, until internal temperature reaches 165°F (75°C) and chicken looks caramelized.
  6. Baste for Extra Flavor: Baste chicken every 10 minutes with reserved marinade.
  7. Broil for Crispiness: In the final 5 minutes, turn on the broiler to achieve a crispy exterior.
  8. Rest and Serve: Let the chicken rest for a few minutes before slicing and serving with steamed rice or noodles.
