Step-by-Step Instructions
  1. In a small bowl, mash the ripe avocado with a fork until smooth. Add a pinch of salt, pepper, and lemon juice, stirring until well combined.
  2. Take two slices of bread and spread a thin layer of mayonnaise or aioli on one side of each. On one slice, spread the avocado mixture.
  3. Layer on the cooked shredded chicken, then add your choice of cheese. Place the second slice of bread on top, mayo side facing out.
  4. Heat a skillet over medium heat and melt a tablespoon of butter. Place the sandwich in the skillet, grilling for about 3-4 minutes until golden.
  5. Carefully flip the sandwich, adding more butter if necessary, and grill the other side for an additional 3-4 minutes.
  6. Remove from the skillet, let rest for a minute, then slice in half and serve warm.
