- In a small bowl, mash the ripe avocado with a fork until smooth. Add a pinch of salt, pepper, and lemon juice, stirring until well combined.
- Take two slices of bread and spread a thin layer of mayonnaise or aioli on one side of each. On one slice, spread the avocado mixture.
- Layer on the cooked shredded chicken, then add your choice of cheese. Place the second slice of bread on top, mayo side facing out.
- Heat a skillet over medium heat and melt a tablespoon of butter. Place the sandwich in the skillet, grilling for about 3-4 minutes until golden.
- Carefully flip the sandwich, adding more butter if necessary, and grill the other side for an additional 3-4 minutes.
