- Combine boneless chicken thighs with olive oil, minced garlic, cumin, paprika, turmeric, salt, and lemon juice. Let marinate for at least 20 minutes.
- Rinse basmati rice under cold water until the water runs clear. In a medium pan, heat olive oil and toast rice with turmeric for 2-3 minutes. Add water, bring to boil, cover, and simmer for about 15 minutes.
- Preheat a skillet over medium-high heat. Sear marinated chicken thighs for 6-8 minutes on each side until golden brown and cooked through.
- In the same skillet, reduce heat to medium and sauté sliced onions for 5-7 minutes until caramelized.
- In a small bowl, mix plain yogurt or tahini with lemon juice, salt, and minced garlic until creamy.
- Assemble the bowl with fluffy yellow rice, sliced chicken, caramelized onions, fresh vegetables, and drizzle the yogurt or tahini sauce on top.
