Cooking Instructions
  1. Combine boneless chicken thighs with olive oil, minced garlic, cumin, paprika, turmeric, salt, and lemon juice. Let marinate for at least 20 minutes.
  2. Rinse basmati rice under cold water until the water runs clear. In a medium pan, heat olive oil and toast rice with turmeric for 2-3 minutes. Add water, bring to boil, cover, and simmer for about 15 minutes.
  3. Preheat a skillet over medium-high heat. Sear marinated chicken thighs for 6-8 minutes on each side until golden brown and cooked through.
  4. In the same skillet, reduce heat to medium and sauté sliced onions for 5-7 minutes until caramelized.
  5. In a small bowl, mix plain yogurt or tahini with lemon juice, salt, and minced garlic until creamy.
  6. Assemble the bowl with fluffy yellow rice, sliced chicken, caramelized onions, fresh vegetables, and drizzle the yogurt or tahini sauce on top.
