Step-by-Step Instructions
  1. Begin by trimming any excess fat from your chosen beef, be it sirloin or ribeye. Pat the steak dry with paper towels and lightly brush both sides with vegetable oil.
  2. If using toasted rice powder, heat a dry skillet over medium heat. Add uncooked sticky or jasmine rice and toast until golden brown, about 5-7 minutes.
  3. Preheat your grill to high heat, around 450°F (232°C). Grill the beef for 3-4 minutes on each side for medium-rare, then let it rest for 5 minutes.
  4. In a bowl, mix fish sauce, lime juice, minced garlic, chopped chilies, cilantro, and green onions. Add sugar and stir until dissolved.
  5. Slice the rested beef thinly against the grain and serve with the dipping sauce on the side or drizzled over the top. Garnish with cilantro and toasted rice powder or sesame seeds.
