Step-by-Step Instructions
  1. Begin by rinsing and patting dry the chicken thighs. Season both sides with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chicken thighs skin-side down for 5-7 minutes until golden and crisp. Flip and cook for an additional 3-4 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add sliced onions and sauté over medium heat for 5 minutes until translucent. Stir in minced garlic and cook for another 30 seconds.
  4. Add apple slices along with thyme and rosemary to the skillet. Sauté for 2-3 minutes until apples soften.
  5. Pour in 1 cup of apple cider and 1 cup of chicken broth, scraping the bottom of the pan. Bring to a gentle simmer.
  6. Return chicken thighs to the skillet, skin-side up. Cover and reduce heat to low. Let simmer for 25-30 minutes.
  7. Remove chicken and stir in 2 tablespoons of Dijon mustard and 1 cup of heavy cream. Simmer uncovered for about 5 minutes until thickened.
  8. Return chicken thighs to the skillet to warm them through. Serve with crusty bread, mashed potatoes, or sautéed greens.
