Ingredients
  

For the Ribs
  • 2 pounds Pork Ribs Baby back or spare ribs
For the Marinade
  • 1/4 cup Soy Sauce Low sodium recommended
  • 1/4 cup Shaoxing Cooking Wine Can substitute with dry sherry
  • 1 large Egg White Can omit for vegan option
For the Glaze
  • 2 tablespoons Gochujang Korean red pepper paste
  • 1/2 cup Light Muscovado Sugar Brown sugar can be used
  • 1/4 cup Honey Adjust sweetness to taste
  • 3 cloves Garlic Freshly minced preferred
For Garnishing
  • 1 cucumber Cucumber Sliced for garnish
  • 2 tablespoons Spring Onions/Chives Chopped for garnish
  • 1 tablespoon Toasted Sesame Seeds For sprinkling

Method
 

Preparation
  1. In a mixing bowl, combine soy sauce, Shaoxing cooking wine, and egg white to create a marinade.
  2. Cut the pork ribs into serving size, coat them with the marinade, and let them marinate for at least 30 minutes.
  3. Prepare the glaze by combining gochujang, muscovado sugar, honey, and minced garlic in a saucepan over medium heat.
  4. Cook until the mixture thickens, about 5–7 minutes, stirring constantly.
Cooking
  1. Preheat the oven to 300°F (150°C).
  2. Place the marinated ribs in a baking tray and cover with foil.
  3. Bake for 90 minutes, removing the foil for the last 20 minutes to caramelize the glaze.
  4. Allow the ribs to cool slightly before serving.
Serving
  1. Serve the ribs garnished with slices of cucumber, spring onions and a sprinkle of toasted sesame seeds.
