Step-by-Step Instructions
  1. In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak with marinade and let it sit for at least 30 minutes.
  2. Mix Greek yogurt, grated cucumber, lemon juice, minced garlic, salt, and pepper in another bowl for tzatziki. Cover and refrigerate for about 20 minutes.
  3. Combine olive oil, lemon juice, honey, salt, and pepper in a bowl for vinaigrette. Whisk until blended.
  4. Heat a skillet over medium-high heat. Sear the marinated steak for 4-5 minutes per side until medium-rare and let rest for 5 minutes before slicing.
  5. Assemble the bowl with cooked grains at the bottom, topped with sliced steak, veggies, roasted chickpeas, tzatziki, and vinaigrette.
