For the Toppings
  • 1 cup Shredded Mozzarella Cheese or other melting cheeses
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Grated Parmesan Cheese optional
  • 1/4 cup Fresh Basil Leaves for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Cook the chicken in a skillet with olive oil for about 6-7 minutes on each side until golden brown.
  4. Let the chicken rest for about 5 minutes before slicing into thin strips.
  5. Lay out flatbreads on a baking sheet lined with parchment paper. Spread pesto over each flatbread.
  6. Distribute the sliced chicken over the pesto-covered flatbreads.
  7. Top with shredded mozzarella cheese and halved cherry tomatoes.
  8. Bake for 10-12 minutes until the cheese is melted and the edges are golden brown.
  9. Cool slightly, then slice into quarters or halves.
  10. Garnish with fresh basil leaves and serve warm.
