Step-by-Step Instructions for Pollo Asado
  1. In a blender or food processor, combine chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, coriander, smoked paprika, salt, and pepper. Blend until smooth.
  2. Place the chicken thighs in a Ziploc bag and pour the marinade over the chicken. Seal and massage the marinade into the chicken. Marinate for 15-30 minutes or overnight.
  3. Preheat grill to medium-high heat. For pan-searing, heat a skillet with olive oil. For air frying, preheat air fryer to 400°F.
  4. Cook the chicken on the grill for 15-30 minutes, turning until the internal temperature reaches 165°F. For pan-searing, flip every 5 minutes. For air frying, cook initially for 8 minutes, flip, then 6-7 minutes more.
  5. Let the chicken rest before slicing. Serve with tortillas, rice, or salads.
