- Start by rinsing your shrimp under cold water, ensuring they are clean and free from any grit. Next, pat them dry thoroughly with paper towels.
- In a mixing bowl, combine cornstarch, all-purpose flour, salt, black pepper, garlic powder, onion powder, and cayenne pepper if you’re feeling adventurous. Stir the mixture well.
- Toss the dried shrimp into the bowl of dry ingredients, making sure each piece is thoroughly coated.
- Pour about ½ inch of vegetable oil into a large skillet or wok and heat it over medium-high heat. Aim for around 350°F (175°C) for frying.
- Carefully add the coated shrimp to the hot oil in batches, frying for about 2-3 minutes on each side until golden brown.
- Once crispy and golden, use a slotted spoon to transfer them onto a plate lined with paper towels to absorb excess oil.
- Garnish with freshly chopped cilantro and serve immediately with lemon wedges.
