Preparation Steps
  1. Start by rinsing your shrimp under cold water, ensuring they are clean and free from any grit. Next, pat them dry thoroughly with paper towels.
  2. In a mixing bowl, combine cornstarch, all-purpose flour, salt, black pepper, garlic powder, onion powder, and cayenne pepper if you’re feeling adventurous. Stir the mixture well.
  3. Toss the dried shrimp into the bowl of dry ingredients, making sure each piece is thoroughly coated.
  4. Pour about ½ inch of vegetable oil into a large skillet or wok and heat it over medium-high heat. Aim for around 350°F (175°C) for frying.
  5. Carefully add the coated shrimp to the hot oil in batches, frying for about 2-3 minutes on each side until golden brown.
  6. Once crispy and golden, use a slotted spoon to transfer them onto a plate lined with paper towels to absorb excess oil.
  7. Garnish with freshly chopped cilantro and serve immediately with lemon wedges.
