  • 1 cup Cake Flour or additional all-purpose flour
  • 2 large Eggs
  • 1 cup Dashi or fish/vegetable stock
  • 2 tablespoons Soy Sauce or gluten-free soy sauce
Main Fillings
  • 1 cup Cooked Octopus or shrimp/chicken
  • 1 cup Cabbage optional, or bok choy
  • 1/4 cup Scallions or chives
Cooking Essentials
  • 2 tablespoons Toasted Sesame Oil or any neutral oil
Toppings
  • 1/4 cup Takoyaki Sauce or Tonkatsu sauce
  • 2 tablespoons Aonori or omit if needed
  • 2 tablespoons Bonito Flakes or crushed nuts for vegetarian
  • 1/4 cup Kewpie Mayonnaise or American mayonnaise

Method
 

Cooking Instructions
  1. Whisk together all-purpose flour, cake flour, eggs, dashi, and soy sauce until smooth.
  2. Brush takoyaki grill pan with toasted sesame oil and heat for 2-3 minutes.
  3. Fill each mold with prepared batter about three-quarters full.
  4. Add 2-3 pieces of cooked octopus and scallions into each mold.
  5. Cook undisturbed for about 3 minutes until golden brown.
  6. Flip each Takoyaki ball over to cook the other side for 1-2 minutes.
  7. Transfer to a plate and drizzle with takoyaki sauce and mayonnaise; sprinkle with aonori and bonito flakes.
