Ingredients
  

Chorizo Filling
  • 1 can chickpeas drained and rinsed
  • 1 cup lentils
  • 1 tbsp apple cider vinegar powder or lemon juice
  • 1 tsp cayenne pepper adjust based on spice preference
Chorizo Oil
  • 2 tbsp olive oil or grapeseed oil
  • 2 cloves garlic minced
  • 1 tsp cumin seeds or ground cumin
  • 1 tsp paprika or smoked paprika
  • 1 tsp turmeric
  • 1 whole jalapeño chopped
Cassava Tortillas
  • 2 cups cassava flour or almond flour
  • 1 cup water adjust as necessary

Method
 

Chorizo Preparation
  1. In a large skillet over medium heat, add chickpeas and lentils. Stir in apple cider vinegar powder and cayenne pepper for about 5-7 minutes until heated through.
  2. In a separate pan, heat olive oil and add minced garlic, cumin seeds, paprika, turmeric, and jalapeño. Cook for 3-4 minutes until fragrant.
  3. Combine cassava flour and water to form a dough. Roll into balls and flatten. Cook tortillas in a skillet over medium heat for 2-3 minutes per side.
  4. Assemble tacos by adding chorizo filling to each tortilla and topping with avocado and radishes.
