- Rinse sushi rice under cold water until clear, then cook according to package instructions (18-20 minutes). Mix in rice vinegar while warm and cool to room temperature.
- In a bowl, combine chopped imitation crab or shrimp, mayonnaise, and sriracha. Mix well and set aside.
- Thinly slice avocado and cucumber into long strips.
- Place nori on bamboo mat, spread sushi rice evenly, leaving a 1-inch border at the top. Flip nori over.
- Layer sliced avocado and cucumber at the bottom edge of the nori. Roll tightly using the mat.
- Slice roll into 6-8 pieces. Top each with spicy seafood mixture, drizzle unagi sauce, sprinkle sesame seeds, and green onions. Broil for 1-2 minutes until bubbly.
