Method
 

Recipe Instructions
  1. Rinse sushi rice under cold water until clear, then cook according to package instructions (18-20 minutes). Mix in rice vinegar while warm and cool to room temperature.
  2. In a bowl, combine chopped imitation crab or shrimp, mayonnaise, and sriracha. Mix well and set aside.
  3. Thinly slice avocado and cucumber into long strips.
  4. Place nori on bamboo mat, spread sushi rice evenly, leaving a 1-inch border at the top. Flip nori over.
  5. Layer sliced avocado and cucumber at the bottom edge of the nori. Roll tightly using the mat.
  6. Slice roll into 6-8 pieces. Top each with spicy seafood mixture, drizzle unagi sauce, sprinkle sesame seeds, and green onions. Broil for 1-2 minutes until bubbly.
