Ingredients
  

For the Meatballs
  • 1 lb Ground Turkey or ground chicken
  • 1 cup Fine Panko Bread Crumbs or almond flour for gluten-free
  • 3 stalks Green Onion chopped
  • 1/4 cup Cilantro chopped; parsley can substitute
  • 1 large Egg
  • 4 cloves Garlic minced
  • 1 tbsp Ginger grated or minced
  • 1 tsp Sea Salt or kosher salt
  • 1 tbsp Lime Zest or lemon zest
For the Sauce
  • 1/4 cup Honey or maple syrup for vegan option
  • 2 tbsp Rice Vinegar or white vinegar
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 1/2 tsp Red Pepper Flakes adjust to taste
  • 1 tbsp Cornstarch or arrowroot powder

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine ground turkey, panko breadcrumbs (or almond flour), green onions, cilantro, egg, garlic, ginger, sea salt, and lime zest. Mix thoroughly and roll into balls.
  3. Place meatballs on the prepared baking sheet, ensuring they are evenly spaced. Bake in the oven for 20-22 minutes until golden brown and cooked through.
  4. While the meatballs bake, prepare the sauce by whisking together honey, rice vinegar, soy sauce, and red pepper flakes in a saucepan over medium heat.
  5. Once the sauce reaches a gentle boil, mix cornstarch with water and add to the sauce. Whisk continuously until thickened.
  6. Remove meatballs from the oven and drizzle the sauce over them, then return to the oven for another 2-5 minutes.
  7. Let meatballs cool slightly before serving. Pair with jasmine rice and garnish with green onions and cilantro.
