Step-by-Step Instructions
  1. Season the shrimp by combining with olive oil, chili powder, salt, and black pepper. Let sit for 10 minutes.
  2. Cook the shrimp in a hot pan for 2-3 minutes on each side until bright pink. Remove from heat.
  3. Prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Refrigerate for 15 minutes.
  4. Make the lime-chili sauce by whisking together lime juice, olive oil, honey, chili powder, salt, and pepper.
  5. Slice avocados and drizzle with lime juice to prevent browning.
  6. Assemble the bowls with a base of coconut rice or greens, then add shrimp, avocado, and mango salsa, finishing with lime-chili sauce.
