- Grease the insides of the slow cooker with nonstick spray or olive oil.
- Place your boneless chicken breasts or thighs in a single layer at the bottom of the slow cooker.
- In a mixing bowl, whisk together the honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and black pepper until smooth.
- Pour the honey mustard sauce over the chicken, ensuring each piece is coated.
- Cover the slow cooker and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- For a thicker sauce, remove the chicken, mix cornstarch with water to form a slurry, and stir into the sauce. Cook on HIGH for an additional 10-15 minutes.
- Return the cooked chicken to the slow cooker and coat with the sauce.
