Method
 

Preparation
  1. Preheat your air fryer to 400°F. Toss diced red potatoes in a bowl with olive oil, salt, and black pepper until evenly coated. Air fry for 16-18 minutes, shaking the basket halfway through.
  2. In a skillet, heat a tablespoon of olive oil over medium-low heat. Add diced onions and caramelize for 10-15 minutes. Set aside.
  3. Increase heat to medium-high and cook ground beef in the same skillet, seasoning with salt and pepper for about 5-7 minutes, until browned.
  4. In a small mixing bowl, whisk together mayonnaise, ketchup, mustard, and Cajun seasoning until smooth. Adjust seasoning as desired.
  5. Layer crispy potatoes in each bowl, top with ground beef, caramelized onions, cheese, and drizzle with special sauce. Add optional toppings as desired.
