Preparation Steps
  1. Melt 2 tablespoons of unsalted butter in a large skillet over medium-low heat. Add in 2 sliced yellow onions along with a pinch of salt and pepper. Stir occasionally, allowing the onions to cook for 30–40 minutes until they turn a beautiful golden brown and develop a deep, sweet flavor.
  2. While your onions are caramelizing, preheat your oven to 375°F (190°C). In a mixing bowl, combine 1 cup of shredded smoked Gouda cheese, 8 ounces of softened cream cheese, ½ cup sour cream, ¼ cup mayonnaise, and 1 minced garlic clove. Blend until smooth.
  3. Once the onions are perfectly caramelized, allow them to cool slightly before gently folding them into the creamy cheese mixture.
  4. Spread the combined dip mixture into an 8x8 inch baking dish, smoothing the top. Place the dish in your preheated oven and bake for 20–25 minutes or until the dip is bubbly and the top is lightly golden.
  5. Once baked, remove the dip from the oven and let it cool for a few minutes. Finish it off by sprinkling fresh chopped chives on top.
